Homemade Bread








Bread is an all season food that can be served in the cold as well as in the hot. Normally eaten with the hands but occasionally some varieties can also be eaten using a fork. It can be topped with different spreads, dunked or dipped in to a gravy or even eaten by itself. The most common use of bread all over the world is in making sandwiches and burgers. Also breads are used with toppings and spreads like butter, cheese, honey, jams and fruit based spreads.



Many a times bread from the bakery may lack the desired taste and even the nutrients. It may even get over-steamed and burnt at some places which do not taste good. There are many reasons that may spoil a bread in the bakery. So for all those of you who do not want to have that bread from the bakery, here are some of the recipes that will help you make your breads at your own home. There are said to be many nutrients in the home made breads.

The general procedure in preparing bread at home is like,

How to make home made breads?

1. Home made white bread:

Ingredients:
1 cup lukewarm water
2 eggs, beaten
1 cup water
4 tbsp. vegetable oil
6 1/2 - 7 cup Hot Roll Mix butter

Method:
In a large bowl dissolve yeast in lukewarm water. When yeast starts to bubble, add eggs, water and oil. Blend well. Add Hot Roll Mix 1 cup at a time, until dough is stiff. On a lightly floured surface, knead dough 5 to 7 minutes, until smooth and satiny. Lightly butter bowl. Put dough in bowl and turn to butter top. Cover with a damp towel and let rise in a warm place until doubled in bulk, about 45 to 60 minutes. Punch down dough. Let stand 10 minutes. Shape into 2 loaves. Grease two (9 x 5 inch) loaf pans. Place 1 loaf of dough in each pan, seam - side down. Cover and let rise again until slightly rounded above top of pan, about 30 to 40 minutes. Preheat oven to 375 degrees. Bake 45 to 55 minutes, until deep golden brown. Remove from oven and brush tops with butter. Remove from pans and cool on a wire rack. Makes 2 loaves.
Variation: for raisin bread, add 1 cup raisins with Hot Roll Mix. Toast bread, if desired.

2. Home made Pita bread:

Ingredients:
4 cup flour
1 1/2 tsp. salt
1 tsp. sugar
1 pkg. dry yeast
1 3/4 cup water
2 tbsp. peanut oil
1 cup flour

Method:
Mix 4 cups flour, salt, sugar and yeast in a bowl. Combine water and peanut oil in small saucepan. Heat to 125 to 130 degrees. Stir into flour mixture. Add just enough of the remaining 1 cup of flour to make soft dough. Knead on floured surface for 8 to 10 minutes or until smooth and elastic. Let rest, covered for 10 minutes. Divide into 12 portions. Roll each portion into 5 inch circles on floured surface. Place on wire racks on baking sheets. Bake at 500 degrees for 5 minutes.
Makes 12 pitas.
Approximately per pita: cal. 215; T. fat 2.8 gr.; choles. 0.0 mg.; sod. 267.8 mg.; pots. 61.2.

3. Home made French bread:

Ingredients:
1/4 cup yeast (3 pkg.)
2 cup warm water
1 cup dry milk
1 qt. warm water
1/2 cup shortening
1/8 cup salt
1/2 cup sugar
10 cup flour

Method:
Let rise until double in size. Form into 6 long thin leaves. Make slices on top. Let rise again. Bake at 350 degrees for 25 minutes.

4. Home made Specialty bread:

Ingredients:
7 cup all-purpose flour
1 tbsp. seasoned salt
1 tbsp. garlic salt
4 tbsp. butter
1/2 cup milk
1 1/2 cup water
1 pkg. yeast
1 med. onion, finely chopped
2 tbsp. olive oil

Method:
In saucepan, heat milk and water until very warm. Set aside and add yeast and butter until yeast dissolves. In mixing bowl, mix half of the flour, the salt, and the onion. Pour in the yeast mixture slowly while stirring. Knead thoroughly while adding additional flour until smooth. Cover and let rise in warm place for 30 minutes. Fold and shape into two loaves. Place in pans and coat lightly with oil. Cover and let rise for 30 minutes in 375 degree oven. Bake for 20 to 25 minutes.
For Italian Bread: Substitute 2 tablespoons Italian seasoning and 1/2 cup Romano or Parmesan cheese for onion.
For Cheese Bread: Substitute 1/2 cup grated cheddar and 1/2 cup Monterey Jack for onion.
